สูตรวิธีทำ"ไข่เค็ม"

สูตรวิธีทำ"ไข่เค็ม"ให้แดงเป็นสีสดมันเยิ้มๆทานอร่อยสูตรสำหรับทำกินทำขาย เราย้ำในสูตรว่าควรจะใช้ไข่เป็ดดีกว่าไข่ไก่ข้อดีที่เปลือกของไข่เป็ดสดมีรูเล็กกว่าไข่ไก่คือ เชื้อต่าง ๆ ก็จะเข้าไปในไข่เป็ดไข่ยากกว่าไข่ไก่เนื้อไข่ขาวของไข่เป็ด จะมีความแข็งมากกว่าไข่ไก่ ทำให้เวลาต้มแล้วจะได้เนื้อไข่ขาวที่มีรสชาตินุ่ม เป็นเนื้อเดียวกัน
วัตถุดิบ ::
ไข่เป็ดดิบ 10 ฟอง
ภาชนะสำหรับดองไข่ (ที่ไม่ทำปฏิกิริยากับเกลือ เช่น โหลแก้ว แก้วพลาสติก กะละมัง เครื่องเคลือบดินเผา)
เกลือ 1 ถ้วยตวง (1 ถ้วยตวง = 16 ช้อนโต๊ะ = 240 กรัม = 8 ออนซ์)
น้ำสำหรับต้มน้ำเกลือ 4 ถ้วยตวง (หรือ 1 ลิตร)
เหล้าขาวใส่เพื่อให้ไข่แดงเป็นสีสดเข้มเป็นน้ำมันเยิ้ม ๆน่ารับประทาน ใส่ในปริมาณเล็กน้อยนะคะ ไม่ต้องเยอะ

วิธีทำ ::
ล้างไข่เป็ดให้สะอาด สะเด็ดน้ำจนแห้งสนิท ใส่ลงในโหลแก้ว เตรียมไว้
ทำน้ำเกลือสำหรับดองไข่ โดยใส่เกลือกับน้ำลงในหม้อ นำขึ้นตั้งไฟจนเดือด และคนให้เกลือละลายจนหมด ยกลงจากเตา พักทิ้งไว้จนเย็นสนิทแล้วค่อยเติมเหล้าขาวในน้ำเกลือที่เย็นแล้วผสมให้เข้ากันนิดหน่อย

เทน้ำเกลือที่เย็นแล้วลงในโหลไข่จนท่วมไข่ จากนั้นใช้ถุงพลาสติกใส่น้ำวางทับลงไปให้ไข่เป็ดจมอยู่ใต้น้ำ ตลอดเวลา ปิดฝาให้สนิท เก็บไว้ในที่ร่ม นานประมาณ 2-3 อาทิตย์ สำหรับทำไข่ดาว เก็บไว้นานประมาณ 2 อาทิตย์ สำหรับทำไข่ต้ม เก็บไว้นานประมาณ 3 อาทิตย์

เคล็บลับ :: ทำอย่างไรให้ไข่แดงเค็มเป็นน้ำมัน ?
หลายคนชอบกินไข่เค็มที่มีไข่แดงเป็นน้ำมันเยิ้ม ๆ ออกมา เพราะทั้งมัน ทั้งอร่อย เทคนิคก็คือ หลังจากที่พักน้ำเกลือจนเย็นสนิทแล้ว คนผสมให้เข้ากัน แล้วเทใส่ลงในโหล จะทำให้ไข่แดงเค็มที่ได้ก็จะเป็นน้ำมันเยิ้ม ๆ น่ากินนั่นเองค่ะ

เคล็บลับ :: วิธีต้มไข่เค็มให้อร่อย

การที่จะต้มไข่เค็มให้อร่อยนั้น มีเคล็ดลับอยู่ที่ "สารส้ม" ทำได้โดยใส่น้ำลงในหม้อ ใส่สารส้ม 1 ก้อน หรือสารส้มป่นประมาณ 1/2 ช้อนโต๊ะ ตามด้วยไข่ไก่ นำขึ้นตั้งไฟปานกลาง ต้มจนเดือด นานประมาณ 8-10 นาที ก็จะได้ไข่เค็มต้มสุดอร่อยไว้กินแล้ว

เคล็บลับ :: วิธีเก็บไข่เค็มต้มให้ได้นานที่สุด

ไข่เค็มที่นำไปต้มแล้วสามารถเก็บไว้ในตู้เย็นได้นานประมาณ 1 เดือน ส่วนวิธีการเก็บรักษาไข่เค็มต้มให้ได้นานที่สุดคือ ให้ใส่สารส้มลงไปแกว่งในน้ำที่ใช้ต้มไข่ด้วย นอกจากจะยืดอายุไข่เค็มได้แล้ว สารส้มจะทำให้สีของเปลือกไข่ และเนื้อไข่ขาวสวยขึ้นอีกด้วย

Tense
ภาษาอังกฤษนั้นมีรูปแบบประโยคที่เรียกว่า Tense เอาไว้แสดงเวลาในกรณีต่างๆ กัน โดยจะทำให้ส่วนของ Verb นั้นเปลี่ยนรูปแบบไป (ซึ่ง verb ที่เปลี่ยนไปตาม Tense คือ Verb แท้ของประโยค) แบ่งเป็น 3 ประเภทเวลาใหญ่ๆ คือ
ปัจจุบัน Present = V1, อดีต Past = V2, อนาคต Future = Will + V
แต่ละเวลาจะแบ่งออกเป็น 3 รูปแบบย่อย คือ
Simple = V (รูปแบบอย่างง่าย), Continuous = be + Ving (กำลังทำ) , Perfect = Have + V3 (เกิดก่อนอีกอัน เวลาไม่สำคัญ)
Present Tenseใช้สำหรับบอกเหตุการณ์ในปัจจุบัน
Present Simple = ใช้บอกเหตุการณ์ที่เกิดขึ้นเป็นประจำ เป็นจริงเสมอ = รูปแบบ คือ S + V1 (ผันตามประธาน) เช่น He watches TV everyday.
Present Continuous = ใช้บอกเหตการณ์ที่กำลังเกิดขึ้นในปัจจุบัน = S + is/am/are + Ving [be ผสมกับ V1 ได้ is/am/are] เช่น I am doing my homework.
Present Perfect = ใช้บอกว่าได้ทำเหตุการณ์ไปแล้วก่อนหน้านี้ โดยไม่ต้องระบเวลาที่แน่นอน(รู้แค่ทำไปแล้ว เวลาไม่สำคัญ) = S + has/have +V3 [เนื่องจาก V1 ผสม have ได้ has/have ] เช่น I have already seen that movie.
Past Tenseใช้สำหรับบอกเหตุการณ์ในอดีต
Past Simple = ใช้บอกเหตุการณในอดีต ที่เกิดแล้วจบในอดีต มักระบุเวลาที่เจาะจงในอดีต = รูปแบบ คือ S + V2 เช่น I walked to school yesterday.
Past Continuous = ใช้บอกเหตการณ์ที่กำลังเกิดขึ้นในอดีต (มักใช้คู่กับ Past Simple) = S +was/were + Ving [be ผสม V2 ได้ was/were] เช่น He was sleeping when I arrived.
Past Perfect = ได้ทำเหตุการณ์ไปแล้วก่อนหน้าจะเกิดเหตุการณ์ในอดีตอีกอันหนึ่ง (จึงมักใช้คู่กับ Past Simple Tense) = S + had +V3 [เนื่องจาก V2 ผสม Have ได้ Had ] เช่น I had already eaten when they arrived.
Future Tenseใช้สำหรับบอกเหตุการณ์ในอนาคต
Future Simple = ใช้บอกเหตุการณ์ในอนาคต = รูปแบบ คือ S + will + V1 เช่น It will snow tomorrow.
Future Continuous = ใช้บอกเหตการณ์ที่กำลังเกิดขึ้นในอนาคต = S +will + be + Ving เช่น He will be sleeping when we arrive.
Future Perfect = ได้ทำเหตุการณ์ไปแล้วก่อนหน้าจะเกิดเหตุการณ์ในอนาคต = S + will + have +V3 เช่น I will have already eaten when you arrive.

โครงสร้างประโยคทั้ง 11 โครงสร้างของ verb to be

1. S + be + adverb

เราสามารถใช้ verb to be กับคำวิเศษณ์ (adverb) ได้ดังต่อไปนี้

–The kids are outside.
ลูกๆอยู่ข้างนอกกัน

–I’ll be there in ten minutes.
ฉันจะออกไปที่นั่นในอีก 10 นาที

–Where are my glasses?
แว่นตาของฉันอยู่ที่ไหน?

–The game was over.
การแข่งขันได้จบลงแล้ว

–The power is out.
ไฟฟ้าดับ

–TV is still on.
โทรทัศน์ยังคงเปิดอยู่

–All prices are up.
ราคาสินค้าทั้งหมดสูงขึ้น

–You walk a lonely road. Oh! How far you are from home.
เธอเดินบนเส้นทางสายเปลี่ยว โอ้...เธอช่างมาไกลจากบ้านเสียเหลือเกิน

2. S + be + adjective

เราสามารถใช้ verb to be กับคำคุณศัพท์ (adjective) ได้ดังต่อไปนี้

–I’m done.
ผมทำเสร็จแล้ว/ใช้เสร็จแล้ว

–I’m frightened.
ดิฉันกลัว

–My hair is dry.
ผมของฉันแห้งกรอบ

–She was born pretty.
เจ้าหล่อนเกิดมาสวย

–The baby is sound asleep.
ทารกกำลังหลับอยู่

–Maybe the network is down.
บางทีเครือข่ายอาจจะล่มก็ได้

–I’m so sorry. I didn’t mean to annoy you.
ผมขอโทษ ผมมิได้มีเจตนาจะทำให้คุณรำคาญ

–The battery is flat.
ถ่านก้อนนี้ไม่มีไฟแล้ว

3. S + be + preposition + noun/pronoun

เราสามารถใช้ verb to be กับ preposition + noun/pronoun (บุพบทวลี) ได้ดังต่อไปนี้

–Those birds were from Brazil.
นกเหล่านั้นมีถิ่นกำเนิดที่ประเทศบราซิล

–He is from an insurance company.
เขาเป็นคนของบริษัทประกันภัยแห่งหนึ่ง

–I am at the breakfast table.
ฉันทานอาหารเช้าอยู่ที่โต๊ะอาหาร

–They were on their way to the north.
พวกเขาอยู่บนเส้นทางที่มุ่งสู่ทิศเหนือ

–The deadline is on Monday.

–The sale date is from July 28th to August 5th.

เราสามารถใช้ verb to be กับ adverbial phrase of distance (วิเศษณ์วลี
แสดงระยะทาง) ได้ดังต่อไปนี้

–The hospital is 3 blocks ahead.
โรงพยาบาลอยู่ 3 ช่วงตึกข้างหน้า

–The bank is two-bus stop away.
ธนาคารอยู่ห่างออกไป 2 ป้ายรถเมล์

–The National Park is about 5 kilometers away.
วนอุทยานแห่งชาติอยู่ห่างออกไปประมาณ 5 กิโลเมตร

–My friends are many kilometers away.
เพื่อนๆของฉันอยู่ห่างออกไปหลายกิโลเมตร

5. S + be + adverb of time/duration

เราสามารถใช้ verb to be กับ adverb of time/duration (วิเศษณ์แสดงเวลา/
ระยะเวลา) ได้ดังต่อไปนี้

–The appointment is this week.
การนัดหมายมีกำหนดสัปดาห์นี้

–The departure time was 11.00 o’clock.
กำหนดเวลาออกเดินทางคือ 11 โมงเช้า

–The second place was 6 seconds behind.
ตำแหน่งที่ 2 ตามหลังอยู่ 6 วินาที

–The TV program was yesterday evening, not this evening.
รายการโทรทัศน์ที่เธอจะดูมีเมื่อวานตอนค่ำ ไม่ใช่ค่ำนี้

6. S + be + to-infinitive ปุ่มลิ้งค์ไป facebook

เราสามารถใช้ verb to be กับ to-infinitive ในกรณีดังต่อไปนี้

6.1 ใช้ S + be + to-infinitive เพื่อแสดงถึงกำหนดการแบบ
เป็นทางการ

–The meeting is to be on Friday next week.
การประชุมมีกำหนดวันศุกร์อาทิตย์หน้า

6.2 ใช้ S + be + to-infinitive เพื่อออกคำสั่ง

–You both are to keep quiet.
เธอทั้งคู่ต้องเงียบเสียงนะ

7. S + be + noun/pronoun

เราสามารถใช้ verb to be กับ noun/pronoun ได้ดังต่อไปนี้

8. S + be + adjective + to-infinitive

โครงสร้างประโยค S + be + adjective นั้น ถ้าเราต้องการนำเอา to-infinitive
มาขยายความ adjective เราก็สามารถทำได้ทันที ดังต่อไปนี้

–I’m glad to see you.
ผมยินดีที่ได้พบคุณ

–Are you ready to order?
ท่านพร้อมที่จะสิ่งอาหารรึยังครับ?

–This equation is not easy to solve.
สมการนี้ไม่ง่ายที่จะแก้

–I’m pleased to inform you that you get promoted.
ผมยินดีที่จะแจ้งให้คุณทราบว่าคุณได้รับการเลื่อนขั้น

–She wasn’t afraid to do a bungee jump.

9. S + be + adjective + present participle (v-ing)

ตามปกติโครงสร้างประโยค S + be + adjective นั้น มักใช้ to-infinitive มา
ขยายความ adjective ดังข้อ 8 ข้างต้น ส่วนการนำเอา present participle (v-ing) มาขยายความนั้นก็สามารถทำได้ แต่ไม่ค่อยนิยมกัน

อย่างไรก็ตาม มี adjective อยู่ 2 คำที่นิยมใช้ present participle (v-ing) มา
ขยายความ นั่นคือ busy และ worth ดังประโยคตัวอย่างต่อไปนี้

–He is busy doing his homework.
เขายุ่งอยู่กับการกำลังทำการบ้าน

–This website is worth surfing.
เว็บไซต์นี่ดีพอที่จะเข้ามาเยี่ยมชม

10. S + be + that clause/question-word clause

เราสามารถใช้ verb to be กับ that clause/question-word clause ได้ดัง
ต่อไปนี้

–The trouble is that she is my boss’s daughter.
ปัญหาก็คือหล่อนเป็นลูกสาวเจ้านายของกันเอง

–He is not what you might think.
เขาไม่ใช่คนอย่างที่คุณอาจจะคิดว่าเขาเป็น

that she is my boss’s daughter และ what you might think ข้างต้น ก็
คือ that clause และ question-word clause ตามลำดับ

และ that clause และ question-word clause (wh-clause) ก็คือ noun
clause ซึ่ง noun clause ก็ทำหน้าที่เป็น ‘คำนาม’ นั่นเอง

ดังนั้น that she is my boss’s daughter และ what you might think ข้าง
ต้น จึงหน้าที่เป็น ‘คำนาม’ ด้วยเช่นกัน

อนึ่ง การทำให้ประโยคทั้งประโยคกลายเป็นเพียงคำนามคำหนึ่งโดยการเติม that
หรือ question word เข้าไปข้างหน้านี้ ถือว่าเป็นวิธีการทางภาษาที่ชาญฉลาด เพราะ
ทำให้เราสามารถนำประโยคทั้งประโยคซึ่งได้กลายเป็นคำนามไปแล้วนี้ ไปทำหน้าที่ต่างๆ
ได้อย่างสะดวก เช่น การใช้กับ verb to be ดัง 2 ประโยคตัวอย่างข้างต้น เป็นต้น

ผู้เขียนขอยกประโยคตัวอย่างอื่นๆของการใช้ that clause และ question-word
clause กับ verb to be เพิ่มเติมให้อีก เพื่อให้ท่านผู้อ่านเข้าใจการใช้นี้ได้อย่างกระจ่าง
แจ้งหมดสิ้นข้อสงสัยใดๆ ดังนี้

โครงสร้างประโยค S + be + adjective นั้น ถ้าเราต้องการนำเอา that clause
หรือ question-word clause มาขยายความ adjective เราก็สามารถทำได้ ดังประโยค
