สูตรขนมหวานไทย : ขนมถ้วย

สูตรขนมหวานไทย : ขนมถ้วย 

     เครื่องปรุง + ส่วนผสม

ส่วนผสมทำตัวขนมถ้วย  * แป้งข้าวเจ้า 1/2 ถ้วย  * แป้งเท้ายายม่อม 2 ช้อนโต๊ะ  * หางกะทิ 1 ถ้วย  * น้ำตาลปี๊บ 1/2 ถ้วย  * น้ำใบเตย 1/4 ถ้วย  ส่วนผสมทำหน้าขนม  * แป้งข้าวเจ้า 2 ช้อนโต๊ะ  * หัวกะทิ 1 ถ้วย  * เกลือ 1/2 ช้อนชา

      วิธีทำขนมไทย ทีละขั้นตอน

1. เตรียมทำตัวขนมโดย นำหางกะทิไปผสมกับแป้งข้าวเจ้า, แป้งเท้ายายม่อม, น้ำตาลปี๊บและน้ำใบเตย นวดจนเข้ากันดี นำไปกรองด้วยผ้าข้าวบางและพักไว้  2. เตรียมทำหน้าขนมโดยนำหัวกะทิผสมกับแป้งข้าวเจ้าและเกลือ คนจนละลายดีจึงนำไปกรองด้วยผ้าขาวบาง และทิ้งไว้  3. ตั้งหม้อนึ่งรอจนน้ำเดือดจึงเรียงถ้วยตะไลลงไป นึ่งจนถ้วยตะไลร้อน จึงเริ่มหยอดตัวขนม (ที่เตรียมไว้ในขั้นตอนที่ 1) ลงไปประมาณ 3/4 ถ้วยตะไล จากนั้นจึงปิดฝาหม้อและนึ่งทิ้งไว้ประมาณ 3 - 5 นาที จากนั้นจึงหยอดหน้าขนม (ที่เตรียมไว้ในขั้นตอนที่ 2) ลงไปในถ้วยตะไล จนเต็มและนึ่งต่อไปอีกประมาณ 5 นาที  4. รอจนเย็นแล้วจึงนำไปเสริฟ เวลาเสริฟสามารถเสริฟทั้งถ้วยตะไล หรือใช้ไม้พายแคะออกจากถ้วยแล้วจัดเรียงใส่จาน

จะแวะมาเที่ยวอเมริกาไม่กี่วัน หรือจะมาอยู่นานหลายปี ก็คงได้เข้าไปกินข้าวในร้านอาหารบางแห่งเป็นแน่ วันนี้เลยอยากเสนอคำศัพท์ วลี และประโยคที่ได้เจอแน่ๆ นะคะ (ถ้าทำงานในร้านอาหารที่อเมริกา ก็อาจได้ใช้เช่นกันค่ะ)

เดินเข้าร้านปุ๊บก็จะเจอพนักงานมาต้อนรับทักทาย hi, how are you today? แต่เขาจะไม่ฟังคำตอบว่าจะป่วยหรือจะตายหรอกนะคะ เดาว่าเดินมาหาอะไรกินได้ คงสบายดี เขาก็ถามต่อไปว่า มากันกี่คน how many (persons)? ถ้าร้านที่มีลานกลางแจ้ง (patio) เขาก็จะให้เลือกว่าจะนั่งข้างในหรือข้างนอก would you like to be indoor or outdoor/patio?

พอพาไปนั่งโต๊ะเสร็จ เด็กเสริ์ฟ (server) ก็จะมาถามว่าจะดื่มอะไร what would you like to drink? หรือ  May I get you something to drink? บางแห่งก็จะบอกว่าวันนี้มีรายการพิเศษอะไรบ้าง Today’s Special เพื่อให้เราคิดไประหว่างเขาไปหยิบน้ำ

หากจะแยกกันจ่าย (American share) แบบบิลใครบิลมัน ก็ให้บอกคนเสริ์ฟตั้งแต่ก่อนสั่งอาหาร separate check, please ร้านเอเชียนบางแห่ง โดยเฉพาะแถวๆ โรงเรียนหรือมหาวิทยาลัย จะไม่ยอมให้แยกบิลค่ะ ให้ลูกค้าไปคำนวนเอาเอง (ก็แหม มีปัญญาเรียน คิดเลขแค่นี้คงทำได้แน่) หรือหากมีคูปองลดราคา ได้โปรโมชั่นพิเศษ ก็ควรบอกเด็กเสริ์ฟไว้ตั้งแต่ต้นเช่นกันค่ะ

พอเขามาเสริ์ฟเครื่องดื่มแล้ว ก็จะถามว่าจะสั่งของว่างไหม Any appetizer for today? ถ้าไม่เอาก็บอกว่าขอสั่งจานหลัก entree/ main dish เลยล่ะกัน จะเอาอะไรก็ว่าไป จิ้มไปที่รูปหรือบอกเป็นหมายเลขของรายการในเมนู ให้แน่ใจว่าได้อย่างที่ต้องการก็ดีค่ะ

กินๆ อยู่ก็จะมีพนักงานมาถาม (หลายครั้งชอบมาตอนกำลังก้มหน้าก้มตากิน หรืออาหารกำลังเต็มปาก พูดไม่ออก) ว่าเป็นอย่างไรบ้าง อร่อยไหม ทุกอย่างดีใช้ได้หรือเปล่า Is everything all right? หรือ Do you like it? หรือ How is your food? (หากเป็นคนเสริ์ฟ ต้องพยายามออกเสียงตัว d ลงท้ายให้ชัดนะคะ ไม่งั้นเป็น foot ไป เขาตกใจ ตอบกลับมาว่าเป็นฮ่องกงฟุตล่ะก็ เราจะตกใจกว่า)

กินใกล้เสร็จ เขาก็จะมาวางบิลเลยค่ะ ไม่ต้องสะดุ้งไป เขาไม่ได้ไล่ เป็นธรรมเนียมที่อเมริกา ที่ที่คนเร่งรัดรีบร้อน เวลาเป็นเงินเป็นทอง เขาจะให้ก่อนที่ลูกค้าจะเรียกขอบิล แต่ถ้าจะไปแล้วก็เรียกเก็บเงินได้ค่ะ Check, please. (บางทีก็ใช้คำว่า bill หรือ ticket ศัพท์วัยรุ่นหน่อยก็ใช้คำว่า tab ค่ะ)

หากมีอาหารเหลือก็ขอกล่องใส่กลับบ้านได้นะคะ May I have a ‘to go’ box? คนที่นี่เหลือนิดเหลือหน่อยก็เอากลับบ้านกัน ฉะนั้นคนเสริ์ฟก่อนจะเก็บจานออกจากโต๊ะ จะถามก่อนเสมอว่ากินเสร็จหรือยัง Are you done? ถ้ากินอยู่ก็บอก I’m still working on it ถ้ากินเสร็จแล้วก็  I’m done เอาจานออกไปได้เลย You can take it  หรือจะเลื่อนจานไปไว้ข้างๆ ริมโต๊ะก็ได้ค่ะ จะเป็นสัญญาณที่รู้กันว่าจานนี้กินเสร็จแล้ว เก็บไปได้เลย

ร้านอาหารที่อเมริกา มีที่ไม่เหมือนเมืองไทยนิด ตรงที่คนเสริ์ฟจะโต๊ะใครโต๊ะมัน เรียกใช้เฉพาะคนที่มาแนะนำตัวกับเรา หรือถามหาให้ถูกคน May I have my server? หรือ Are you my server? เวลาเรียกก็แค่ยกมือขึ้นนิดๆ พูดว่า Excuse me ไม่ควรตะโกน ไม่ควรโบกมือไปมานะคะ (ขนจั๊กกะแร้จะลอยออกมาได้ หมดอร่อยพอดี)

และที่อเมริกานี้ จะต้องให้ค่าบริการอย่างน้อย 10-20% ของยอดรวมค่ะ ถ้าไม่อยากจ่ายก็สั่ง to go กลับบ้าน ถ้านั่งในร้านก็คือธรรมเนียมที่ต้องจ่ายค่ะ ถ้ารูดบัตรเครดิตจะมีช่องให้ใส่จำนวนทิป ก็เขียนตัวเลข และรวมยอดทั้งหมด พร้อมเซ็นต์ลายเซ็นต์กำกับค่ะ ถ้าจ่ายเงินสด จะเอาเงินทอนก็บอก I need some change,please ถ้าให้ไปพอดีรวมทิปแล้ว ก็พูดว่า It’s all yours

แค่รู้ศัพท์เยอะ...ก็ยังไม่ทำให้พูดได้นะ
การเอาศัพท์มากองรวมกันแล้วยำๆ
นั่น...ไม่ใช่เรียกว่าพูดได้
.
แล้วเคยเป็นป่ะ....รู้ศัพท์เป็นตัวๆนะ
แต่ไม่รู้ว่าจะเอามันมารวมเป็นประโยค
แล้วพูดออกไป....ให้มันรู้เรื่องได้ยังไง
.
นั่นแหละค่ะ....
คือสิ่งที่ครูมอสกำลังจะบอก
แค่รู้ศัพท์อย่างเดียว...มันไม่พอ

อยากพูดได้....
สิ่งที่ต้องรู้...มี 2 อย่าง
1) ศัพท์
2) โครงสร้าง

โครงสร้าง...
คือสิ่งที่ครูมอสชอบอัพให้บ่อยๆเนี่ย
ใครตามอยู่ในเพจ...จะรู้ว่าให้ไปเยอะมาก
และพยายามลงให้เก็บกันได้เรื่อยๆ
.
สิ่งที่ต้องทำคือ...
1) จำโครงสร้างให้ได้
และ 2) เอาศัพท์มาประยุกต์ใช้เอา
.
เช่น
โครงสร้างในวันนี้คือ....
▶ Are you ready to + v.inf
= เธอพร้อมที่จะ.....รึยัง?
.
ทีนี้เราก็หาศัพท์ที่เป็น V.inf มาใส่เอา
ให้มีบริบทที่เหมาะสม
.
▶ Are you ready to....go?
= เสร็จยังเนี่ย จะไปยัง
...พร้อมที่จะไปรึยัง
.
▶ Are you ready to....fall in love?
= เธอพร้อมที่จะตกหลุมรักรึยัง ฮั๊ยยย!

= เธอพร้อมที่จะ...มั้ย?

เรามาต่อที่โครงสร้างใหม่กันค่ะ

= ฉันไม่พร้อมที่จะ....
.
ไม่พร้อมที่จะอะไรก็เหมือนเดิมเลย...
เอาศัพท์ที่เป็น V.inf มาใส่เอา
ให้เหมาะสมกับแต่ละบริบท

ไม่ได้ทำเพจเพื่อ 'แข่งขัน'

วันนี้พวกเค้า...มีพลัง...ในการที่จะเริ่มต้น
เรียนภาษาอังกฤษและทำให้ชีวิตตัวเองดี
มากขึ้น

อ่านแล้ว....มันมีความสุขนะคะ
มันรู้สึกว่า...เออสิ่งที่เราทำมันมีค่าดีว่ะ

ทุกวันนี้....มีความสุขค่ะจริงๆ
ไม่งั้นครูมอสจะขยันอัพนี่นั่นให้ทุกวันหรอ grin emoticon

มันคือความสุขง่ายๆที่เกิดจากการให้
มีอะไรดีๆก็แบ่งปัน ช่วยกัน

ให้คนไทย....
...สนุกกับการเรียนภาษาอังกฤษ...มากขึ้น
ให้คนไทย...

แม่งได้แล้ว ศัพท์ตัวสองตัว
เห็นบ่อยๆมันจะจำได้เอง

เนี่ยไม่เคยหวง...
จะเอาไปทำรึเปล่าแค่นั้นเอง

ครูมอสให้ 'เครื่องมือ' ไปแล้ว
บอก 'วิธีการ' ไปแล้ว
แฟนเพจต้องเอาไป 'ลงมือทำ' เองนะคะ

ถ้าทำ...มันก็ได้
แต่ถ้ามัวแต่หาข้ออ้าง
ไม่ว่าง ไม่มีเวลา ขี้เกียจ
